My name is Rahil Abdullah-Lewis. I am a health conscious, 27 year old stay at home mom, who also enjoys indulging in beauty products-on a budget! In another life I was a registered nurse, I was in love with the idea of helping others and learning about ways to keep myself healthy, however, I was never able to find my niche in Western medicine. I love working out, finding healthy foods and lifestyles that work with me, trying out make-up, cooking and photography.
Summer is the perfect time for a yummy salad. I believe there are 3 reasons why: your body craves extra water due to the extreme heat and humidity, the best fruits and vegetables are in season, and they come in fantastic colors! This summer I was introduced to 2 great salads, Spinach Walnut and Mandarin Chicken Surprise! Besides the great taste, the other thing I love about these salads is that they share some similar ingredients and I can find all of them at my favorite grocery store, Trader Joes, so shopping is simple. I tried them both and fell in love, so give your tastebuds a treat and enjoy the recipes below!!!!
Spinach Walnut Salad
6 oz. Baby Spinach
1/4 cup dried cranberries
1/4 cup thinly sliced red onions
1/2 cup walnuts-lightly toasted
1/2 cup crumbled blue cheese
Dressing: Raspberry Balsamic Vinaigrette
In a bowl combine baby spinach, red onion, walnuts and cranberries. Toss lightly with 2-3 TBSP raspberry vinaigrette. Sprinkle blue cheese on top and serve immediately. Serves: 4
Mandarin Chicken Salad
2 cups green leaf lettuce
1/4 cup dried cranberries
1/4 cup mandarin orange slices
1/4 cup chopped walnuts 1/2 cup grilled or breaded chicken
Dressing: Sesame Soy Ginger Vinaigrette
In a bowl combine green leaf lettuce, dried cranberries, mandarin oranges and walnuts. Toss lightly with 1-2 TBSP sesame soy ginger vinaigrette. Top with chicken and enjoy! Serves: 2
